Sweet Kielbasa Mushroom Fry-up

Ingredients
1/2 - 1 small onion, diced 2-3 cloves of garlic, minced
1 Package mushrooms, sliced* 1 kielbasa (your choice on variety), sliced**
1/4 cup light brown sugar 1 bottle ale ***
2 Tbsp Olive Oil 1-2 Tbsp Flour
Optional
Peas / Diced Asparagus Rice / Egg Noodles
Procedure
- Mix Ale & Brown Sugar (carefully, sugar gives the carbonation something to form around)
- Add olive oil to high-sided frying pan or wok over medium heat
- Add onions and garlic, cook until garlic is golden brown and/or onions are clear
- Add mushrooms and cook until they are giving off their own moisture
- Add Kielbasa and slowly stir-fry, letting it get a little brown on the side of the chips
- Add Ale & Sugar mixture, stirring thoroughly. Cover and reduce heat, let it come to a simmer
- Slowly sprinkle flour on top and then stir in - if you just plop it in there expect to bite a lovely chunk of flour while eating
- If adding any other vegetables, add now, cover and leave to simmer for 10-15 minutes
Best served over rice or egg noodles - be careful not to let sauce reduce too much
* Generally I prefer to snap mushrooms in half while washing
** Generally I halve the kielbase lengthwise, then cut each halve into 'chips' of Kielbasa
*** Feel free to use lager, just my experience that it tends to be too sweet, no flavour balance
