Simple, healthy-ish Pannenkoeken

Ingredients

1/4-3/8 cup eggbeaters eggwhites                 1/4 cup flour

1/4 cup 2% milk                                          pinch of salt and pepper

olive oil or spray down with PAM

Optional

Sliced fruit/diced garlic/leeks /onions/etc        Spices (Cinammon, sugar, italian seasoning, it can really vary)

Procedure

  1. Put pie plate/cake pan/oven-safe frying pan in the oven and pre-heat to 400 degrees
  2. Beat egg beaters to mix in some air
  3. Mix all remaining ingredients slowly in to egg-beaters (include all spices at this point)
  4. Remove plate from oven, grease lightly and pour the mixture in
  5. At this point, add fruit, etc to the top of the mix (don't mix in)
  6. Cook in oven for 15-25 minutes until the top is a nice golden brown and the sides have risen

Optional Procedure

Coat with jam, butter, sugar, pizza sauce, whatever strikes your fancy

Notes

Like most of my cooking this is all meant to be relatively low calorie and healthy, although not to a crazy degree.  If you don't care, by all means use a real egg, whole milk and melt 1-2 Tbsp of butter in to the pan before adding the mixture.  Overall I haven't noticed enough of an improvement in flavor to justify the extra fat and cholesterol.

The two best varieties of this I've made were one where I added leeks and cilantro to the mix and then sprinkled a little low-fat cheddar on top, and another where I mixed minced garlic and onion in, and then spread a bit of pizza sauce on top when it was done cooking.
